By honey malt do you mean Gamrinus Honey malt? If so, I think it is a crystal malt of about 25 lovibond.  Use as you would any other crystal malt. Mark Hafterson Don’t let your beer be a stranger. HOMEBREW!

Gambrinus Honey Malt is NOT a caramel/crystal malt.  Unlike crystal malts honey malt is not roasted, so there is no potential for astringency.  Color is 20-30 L.  This is Gambrinus’ version of an old German malt, bruhmalt.  Very, very sweet and a really wonderful way to increase color and sweetness in the beer.  I used some in a 1.065 beer around Christmas time and it was truly delicious.  I highly recommend it for brewing amber ales; good color and excellent flavor. –Jeff Frane
