Newbie Yeast & fermentation question
Question:
I am a new brewer in search of some answers/advice. The background for my story: For my birthday I received a 5gal carboy and Muntons Bitter Ale Kit. The previous brews I have made I used liquid yeast. So I went to the local homebrew store to get a pack and ask some advice on the kit. They advised adding an additional 2 lbs of malt so I bought the additional 2 lbs. For the yeast I bought the Wyeast ESB (can’t remember the #). After brewing, placed the fermenter in a basement bathroom which for some reason maintains about 70 degrees. On the second day I checked on the carboy and found some blowoff out of the airlock. No big deal I thought, so I cleaned it up and left it alone. I checked it this morning (day 3) and my bathroom was trashed. Top of the airlock blew off, beer all over the wall, floor , etc… My question: I take it 70 degrees was too high for that strain of yeast. I have moved the carboy to a closet in the basement which should be between 60 and 65. Is the batch of beer trashed? Is it going to smell like a banana plantation? TIA Kenny Simpson

Hi, I think your temp was alittle(!!!) high. It will probably be OK but there’s no way of knowing until you open the first bottle Cheers Liz Blades Liz Blades – proprietor of Blades Home Brewery http://www.dmatters.co.uk/Blades/blades.html
