Help – need ginger beer recipe ASAP
Question:
I’m involved in a project with Parks Canada which involves historical re-enactments of the mid-19th century. We want to make ginger beer to serve to tourists, but as it’s a federal park it has to be non-alcoholic.
In the cookbook Traditional Irish Recipes by George L. Thomson there is a recipe for Ginger Beer as follows: 1 oz root ginger 1 lb sugar 1 oz yeast 1 oz cream of tartar 1 lemon Place the bruised ginger in a bowl, adding the sugar, cream of tartar, and lemon rind and juice. (Pour on a gallon of boiling water and stir thoroughly with a wooden spoon. When lukewarm, mix the yeast in a little water with a teaspoon of sugar, and when it begins to froth, stir in with the rest. Leave for one day, after which it can be filled into screw top bottles. Above measurements are in the British Imperial system. Note the following conversion: The British Imperial Quart consists of 40 fl. oz – equal to 1 1/4 U.S. Quarts. (Following that, I used 5 U.S. qts for a gallon). Standard spoon sizes are slightly smaller in the American system and therefore all spoon measures should be taken generously in the U.S. & Canada. Well, two of my homebrew supply stores here carry home soda extracts, and one of the available extracts is for Ginger Beer. It is called "Old Fashioned HOMEBREW Ginger Beer Soda Pop Base" by Rainbow Flavors, Inc, Osage Beach, MO 65065 USA I’m not sure if it is available in Canada, but you could probably ask around at your homebrew sources. The extract casts about $4 USD for enough extract to make 4 gallons.
