I recently got back my judges’ scoresheets from a homebrew competition and all my beers seemed to suffer from a DMS problem. What are the causes of DMS and how can I minimie it? TIA J Gardner Biggs

DMS can be caused by covering the pot during the boil, or by slow cooling after the boil.  To reduce DMS levels, don’t boil with the lid on, and use some form of forced cooling after the boil. I believe I have read that certain kinds of infections can also cause DMS. —

If the judges picked up a celery-flavor, a vegetal note…then you have DMS. Just boil longer next time…add an extra fifteen minutes to your boil, and delay aroma hops addition. Get a good boil. The test batch should lose that note…if not, boil longer the next time!

One reason can be keeping a lid partially over your brewpot during the boil. Spam protection in my "reply to" address… Brian Levetzow (Levetzowbtatjunodotcom)      ~ Laurel, Maryland Man does not live on bread alone. He needs a homebrew to go with it.

DMS has sort of a "cooked corn" or "cooked vegetable" character.  Pop open a bottle of Rolling Rock sometime if you want to taste a commercial beer that has noticeable levels of DMS. —
