Dang! First batch blues…

Question:

- Hide quoted text — Show quoted text – snip I’ve brewed a few kits (i.e. just add sugar and water) Lager:                        It was vinegar (yuk) Lager (plus I dry hopped it): Not vinegar, but had a funny taste a bit like                              your wifes description.  A kind of not very                              nice ‘candy’ flavor. Mild:                         see directly above I have just tried 6.6 lb EDME DME extract, 5 oz willamette, 1/2 lb crushed chrystal malt: It has only been bottled for 3 days but I’ve tried one and it has an ok smell but still has the same not very nice ‘candy’ flavour, although much better. Perhaps this is a trait of extract brews (Any ideas anyone). Sorry I couldn’t help as I seem to be in the same situation. Please help me as well!!! — Regards, Darren Scourfield

Guess I should have posted this to the group.  I sent this to Brian, maybe it will help: I’ve always used liquid yeast.  I would also suggest using a name-brand malt extract like Northwestern or Mutton & Fisson.  Here’s a recipe that can’t fail.  It was my first batch and it was a great one: Beer: India Pale Ale Volume: 5 Gallons Ingredients:         6# Liquid Amber Malt Extract         2.5# Light Dry Malt Extract         1# Crystal Malt
