I have been experimenting with dandalions in beer. I am using them as an alternative bittering agent…the leaves that is… anybody have any thoughts or experiences in this area of herb beer.??

Sounds like a good idea; and it’s not as crazy as it sounds. I have heard of people making dandelion soup. It should add an interesting flavor. There are unlimited possibilities for herb beers. If you get a good recipe down, you should enter in the national homebrew competition in the herb beer category.

I’m not sure that dandelion leaves are bitter enough to substitute for hops. But I guess it depends what you want. I understand the dandelion "milk" that bleeds from the stem is very bitter but I don’t know how pleasant it would be, and I don’t know if anyone’s studied the toxicity of it in large doses (yes, I know the leaves, flowers, and roots are non-toxic but that doesn’t necessarily mean the whole plant is). –Eric
