Bottling Sugar Question
Question:
Should the amount of corn sugar be different for different styles of beer? I’ve been using the same amount (1 cup for 5 gallons) for Pale Ales, Porters, ESB’s, etc. It appears that the lighter the beer, the more carbonation I get. Does this mean I’m doing something wrong or do I need to use more sugar for "heavier" beers? Charley Burns, President Deer Valley Brewing Co. (aka my deck) http://www.el-dorado.ca.us/~cburns

Hi Charley In Zymurgy issue Vol18 No.2 article "Brew by the Numbers" covers using different amounts of priming sugar to achieve specific amounts of carbination in beer. The author uses weight instead of volume, so you would need a scale that measures to the nearest tenth of a gram ( mine cost $150.00). He also covers the amount of carbination typical for a few given beer style. There is more info than I could cover here. BTW this article is very technical in nature (there are some heavy duty calculations included). Hope this helps Mark Hafterson Don’t let your beer be a stranger. HOMEBREW!
