Adding water to secondary

Categories: Homebrew Beer

Question:

Is there anything wrong with adding a half gallon or so to the wort after racking to the secondary in order to top it up?

Not if you boil the water first to sterilize it. Also, note that this will make your beer thinner–you may need to brew it stronger to make up for the extra water. Volume lost to boiling can be made up without thinning the beer from it’s intended profile, as the hops, barley, etc. are still there. Volume lost during racking, left behind with sludge in the pot, etc., carries off the good stuff, too; replacing it will thin the beer, — R E HAWKINS

Just make sure you boil the water first to remove the oxygen.  I believe this is what Noonan says to do in "Brewing Lager Beer". bt
