Wheat Beer Recipe Needed

Question:

Does anyone have a good Honey or Raspberry Wheat recipe (extract) they would like to share? Looking for a really good beer for a summer solstice party next month.  I had intended to order one of the William’s Brewing kit beers (never tired a kit before) but being the procrastinator I am, I have ran out of time and will have to purchase from the local home brew supplier.  As always, your assistance is deeply appreciated. Here’s my favorite beer.  It’s the house beer for me and my wife. Weihnachtun Honegweizen (note Weinachten is spelled with a "u"–also note my last name) 5# Munton’s Wheat/Barley DME 2# honey (try different varietals) (1-2# for some variation) 1 oz Czech Saaz whole hops for 60 mins. 0.5 oz Czech Saaz whole hops for aroma (2 mins or during cooling) WYeast 3068, Weihenstephan Weizen Steep honey in 1 gal water at 175-185F for 40 mins in separate pot.  Cool to 80F and add to carboy. Boil DME in 1.5-2.5 gal water for 60 mins. OG about 1.050 FG about 1.013 I think sometimes the 2# of honey makes the final brew a little too alcoholic. Prost. Sandy Christmus

Looking for a really good beer for a summer solstice party next month.  I had intended to order one of the William’s Brewing kit beers (never tired a kit before) but being the procrastinator I am, I have ran out of time and will have to purchase from the local home brew supplier.  As always, your assistance is deeply appreciated. Full grain or extract???? I used to use 6lb can of IRKS (not sure if it is still around) wheat extract for five gall batch with some Hallertau and Sazz hopping. Use an wheat yeast like 3056 or 3333 from Wyeast. If you add honey use  no more than 10% of your fermentables. Good clover honey or even one from your local area is good.  Fruit, stick with tart fruits like raspberry or cherry. You can fruit into secondary and let it sit for a bit. Oregon Fruit Products has a fruit puree that works great in the secondary. Its aseptic so its clean. Actually you can experiment, as I did at times and break a 5 gall batch into 2.  Use raspberries in one and try cranberries, lemon and orange peel in the other. The later is very interesing. Paul

Here’s a good one that I’ve done a couple times… 9# liquid wheat extract 1 1/2# flaked wheat 1/2oz hallertauer for 45 minutes 1/2oz hallertauer for 15 minutes Wyeast 3068, 3333 or 3944 Go with a 45 minute boil if you can do a full boil. 30 minutes if you have to do a partital boil and kick up the first hop addition to 3/4oz. The 3944 yeast is a wit beer yeast, but gives an interesting kick to the brew. Luck Mike
