I could not begin to tell you how much lactic acid to make a Belgian brown sour.  I doubt that I would ever attempt such a thing.  If you want a controllable sour, consider acidulated malt ( saurmalz) from Weyermann.  I use a quarter pound in five gallons to give stouts a lactic tang.  I would think that double that would be quite distinctive, but I have no experience with it. —  Dan Listermann Check out our E-tail site at http://www.listermann.com Take a look at the anti-telemarketer forum.  It is my new hobby!

lactic acid.  Where does one obtain lactic acid?? At a home brew supply store or mail order house.  Most should carry it (88%) in 2 or 4 ounce bottles… it’s used to acidify sparge water.  What I have heard is that you will want to use between 1 and 4 ounces of the stuff per 5 gallons.  Always add acid to water, NEVER the other way around!  Also, wear hand and eye protection, just in case it splatters anyways.
