Question:

Unless you really like a bite in the finish, I’d scale back on the Black Patent about 25%. This recipe took 2nd at the 1st Annual Easter Seals Competition this spring in Eugene, Oregon. Portal Porter: QTY DETAILS 7 lbs Amber Malt Extract 1 lb Black Patent 2.5 oz Cascade (AA 6.3) Boiling 1 oz Goldings (AA 4.1) Aroma 1 Liquid Ale Yeast OG 1.050 – 1.060 FG 1.012 – 1.018 Add Black Patent to 2.5 gal water and bring to boil. Let boil 10 minutes. Remove grains. Stir in malt extract. When boiling commences add Cascade hops. Boil for 60 minutes and add aroma hops the last 10 minutes. Enjoy! Black Patent may otherwise be known as Black Malt.  Very dark roasted malt over 400 Luvibond. Geez…let me try this again: 6.6 lbs light liq malt extract 1 lb Honey Malt (30L) 1/2 lb Chocolate Malt 1 cup Roasted Barley 2 tsp Gypsum 1 Tsp Irish Moss 1 oz Centennial Hops for 45 minute boil 1 oz Cascade hops near the end of boil Mountons Dry Ale yeast 2/3 Cup priming Sugar Rack to 2nd after a week.  I wanted more hop taste so I added an oz of crystal in 2nd for two more weeks. I like this one pretty good.  It is based on a recipe called "Pine Box Porter" that was posted to this newsgroup several months ago.  It’s pretty good right now and very drinkable but I think it still needs a month or so to smooth out.  I did sort of a decoction mash with this but a regualar infusion mash should be fine. 10-30-99 6.75 lbs Vienna 2.5  lbs Klages (2-row) 1    lb Caravienne 0.75 lbs Chocolate Malt 0.5  lbs Belgian Biscuit 0.5  lbs Special B 0.25 lbs Malted Wheat 0.25 lbs CaraPils 0.25 lbs Black Patent 1   oz Galena Pellets 12.0% AA (70 min) 0.5 oz Cascade 5.2% AA (30 min) 0.5 oz Cascade 5.2% AA (15 min) WYeast 2206 (Bavarian Lager) Procedure 12.5 quarts of water Heated to 160 F added about 1 tsp of gypsum added grain to water stabilized at about 149 F 35 min later temp at 145 F Drew off about 1 gallon of mash heated to 155 F rested 35 min Boiled 25 min added back to main mash.  stabilized at about 152 F rested 30 min. drew off liquid and heated to boiling. added back to main. repeated until temp was 170.   (actual temp about 175) Added a bit of gypsum to sparge water. Collected 5.25 gallons at 146 F.  s.g. – 1.050         I think this s.g. is wrong because the thicker first runnings were probably         settled in the bottom…  Either that or I collected closer to 5.5 gallons Boiled. Efficiency = 72.7% 5.5 gallons in fermenter. Fermented at 50 to 55 F 11-20-99: Bottled.  Primed with 3/4 cup corn sugar. f.g. = 1.016

This is my house all grain porter/stout, simple but very drinkable: 9.0 lb pale malt 0.5 lb roasted barley 0.5 lb chocolate malt 1.0 lb flaked oats (or other flaked grain) (optional: 1 teaspoon Burton Salts since my water is soft) Mash at 156F for 60 minutes.  Sparge with 170F water to make 6.5 gallons wort.  Boil with 2 oz EKG for 60 minutes.  Force chill to 65F and pitch English Ale yeast (use a starter).  Ferment 1-2 weeks and keg or bottle.  Age at least 4 weeks before drinking. This one worked very well for me (drinkable after a week in the bottle, 4 weeks from brew day): 8 lbs DWC Munich 1 lb pilsner ( any 2 row should work) 1 lb carapils 1/2 lb crystal 20L 1/4/ lb biscuit Mash in at 155 F for 90 minutes, using 3 gal water.  Do a mashout at 170 for 10 min.  Collect 7 gal wort for a 75 min boil.  Cool and pitch Brewtek British Real Ale yeast (or any British strain you prefer). My O.G. was 1.062, extraction efficiency 86%, calculated IBU = 40.8. Adjust the amount of grain for your extraction rate, and collct your customary amount of wort (I live in the desert and lose a lot in the boil). Sounds good. At what point do you add the molasses? At the beginning of the boil or later? I’m fairly new to brewing and hate ruining a batch. Also I don’t have many opportunities to brew so I like to do it right the 1st time. So far I’ve only done extract w/ grains type brewing and hope to go to all grain soon or at least give it a try.
