On the road, what to do with the brew?

well I dont have much choice as my girlfriend said not to expect any bottled beer to be here when I get back. Im going to transfer them both and bottle when I return, which means that, gee, I hve to buy two new carboys (bummer).. I dont have a fridge but the cement floor in my basement stays around 58DF (Its great for ales.) so thats what they are going to do. Packing D Before you buy.

Response:

so what will the effects of 1 month in a secondary be on my beer? Will it ruin the aromatics of the honey, or mature the taste so the 7% alcohol doesnt burn?

Your beer will be fine.  I’ve had beers in secondary for a lot longer than that with no ill-effect. Phil Before you buy.

I have never transfered beer before, prefering to bottle condition my beer, so what will the effects of 1 month in a secondary be on my beer? Will it ruin the aromatics of the honey, or mature the taste so the 7% alcohol doesnt burn?

My strong beer usuaully spends a month in the secondary. It makes sure fermentation is really done, and I figure the bulk aging can’t be bad for it.  i wouldn’t worry about it at all.  And if you’re concerned with honey aroma, how about priming with honey when you get back and can bottle it? — Joel Plutchak     "Every man is a valuable member of society who by his                    knowledge for men… No ignorance is without a loss                    to him, no error without evil." – James Smithson

Response:

Hmmm… Ft. Bragg.  According to MapsOnUs, that’s just 42 miles from Anderson Valley Brewing co.  The Oatmeal Stout is excellent in the store, but I haven’t had the chance/opportunity to get down to the pub.  It’s about 3 hours from where I’m at in Fairfield. Oh yeah, your question:  If anything, the extra time in the secondary will improve your beer. Rik

– Hide quoted text — Show quoted text – My boss just called me and said that I need to be in FT Bragg CA by Thursday, and Ill be there for a month. The problem is I have one beer that I MAY be able to bottle before I go, but I just made another batch last night (Ironbark Honey Brown ale) Thats not going to be ready in time. My plan is to hope that the 1st beer finishes, bottle it and then transfer the 2nd into the spare carboy, moving the spare carboy to our 62DF basement.
