Long fermentation…

Sure, and the use of honey is known to promote a more complete fermentation, promoting a dryer tasting beer. Maybe this is why it takes longer. Honey is also harder and slower to ferment than maltose. Michael, My last batch was a Pale using Wyeast 1056 (American) and its ferment went for about 2 weeks! O.G. was 1.044 and F.G. was a nice 1.012. Jim

Anyone else ever run into this? mike What yeast did you pitch? I am having a similar experience right now. I pitched Wyeast London Ale III on Saturday (from a starter). It was into active fermentation by Saturday evening, blew out the top of the primary Sunday at noon and now its late Tuesday night, still pumping out a bubble every 6 seconds. I really want to drink this beer, I hope it stops someday soon.
You can speed things up by keeping the guy at 75 degrees or so. It will change the flavor to give more ‘fruity’ notes, but this is often quite tasty. Once ferm has stopped, you can facilitate clearing by slightly chilling your fermenter (wrap a wet towl around it and aim a fan at it, keep it moist). This may also ‘clean up’ the taste. Eric Guire

What yeast did you pitch? I am having a similar experience right now. I pitched Wyeast London Ale III on Saturday (from a starter).
