Fastest ESB in the West (San Diego)!

Question:

I brewed a partial mash ESB last week.  Nothing fancy, you know, 2 row, crystal, toasted, Fuggles, Fuggles, Fuggles….  However, after removing my White Labs Pitchable English Ale yeast from the frig, I noticed it didn’t act like the Cali yeast.  It was rather flat, stuck to the bottom of the tube and just barely fizzed when opened.  Uh oh!!! (Now I heard that is common) Well, to make a long story short, this stuff took off  like a "suped up" Honda Civic at a stop light!  My beer fully fermented in 2.5 days!!  F.G. was 1.01!!   Snuck a taste, tasted great!. Added my flavor hops at the end of the boil for the first time and was happy with the outcome.  The key is to cover the wort quickly after adding the hops and let them steep thru chill. Two questions: 1.  Anyone had fast fermentations like this? 2.  Even though I racked the beer Saturday night, can I wait a week or so and then dry hop?   C2, Beer Prude OBTW,  Went to Coronado and La Jolla Brewing Companies (San Diego) last week and enjoyed the well balanced Amber and hearty Porter respectively.  Anyone tried these brewhouses?  Last day was yesterday for La Jolla until (remodel?) completion.
