Question:
My next door neighbor and I began brewing beer about a year ago and have been very successful. Now I want to try a cider, and am wondering if I can the apple cider from a local orchard, or do I have to go through the hastle of making the cider myself. If if I buy the cider, will the preservative in the cider kill the champagne yeast. Please help me as this is my first time, and I feel rather awkward!! Thanks

I made cider last year using 3 gallons that I bought at an apple orchard. I used regular ale yeast and had no problems. The cider over carbonated in the bottle, so I had volcanic eruptions when I opened it. I think this due to the fact that I bottled it after 7 days of fermintation. This year I am going to try all ale and champaigne yeast and let it set alittle longer. David Wiggs

Telford’s makes a cider syrup. I’ve used it only just recently so I cant pass on any results to you. I was wondering if anyone out there has used it and what methods were employed for what results. The one time I used 1 oz Fuggles hops with a one hour boil, is this correct? Thanks much.
