Beano is a commerical alpha galactosidase product derived from a fungus (Aspergillus niger). This enzyme hydrolises the galactocide remnants from large saccharides such as raffinose found in legumes. These large sugars are not digested well and can ferment in the gut causing, well, something any 3rd grader can expand upon. Some homebrewers have suggested beano as a way to lower final gravity and dry out a beer but I don’t know as there is consensus as too how well it works. The HBD has had a number of discussions on this.

I’ve tried Beano a couple times and the problem is that it almost works too well. There’s no way of knowing exactly how much it’s going to chew up. It was originally presented in BYO as a way to make low carb light beers by using Beano and a large amount of rice. Beano is used by people making chili, with the intention of reducing the farts. Kinda takes the fun out of it, IMO. Some homebrewers use it to reduce the final gravity of their beer. Kelvin
