He also mentions that if you forget to rehydrate it, used it anyway – not as effective but still helps

I have never heard of this, did I miss something? I don’t know about this "flaked" IM, mine seems to be finely chopped, but there are no directions to hydrate it. Well, maybe I’ll just switch by compromise and go to 30 minutes. 1/4 tsp seems awfully slim even though I seem to remember reading somewhere that more isn’t necessarily better. To tell you the truth, I’m not even sure I could actually tell the difference one way or the other. I haven’t had any clarity problems in a long time. But it seems to be a big topic of discussion in my LHBS since I made the off hand statement that they (Steinbart’s) were wrong. It would be nice to clarify the issue if at all possible. (pun intended)

I buy my IM there and have used it from the start of the boil (my early days) and late in the boil (last 20 minutes). I changed because of the info that came across RCB and HBD. Hi Russ, I always use the "flake" moss at 1/4 tsp with 15 minutes left in the boil. No problems here. Cheers! I’ve used the same Irish Moss from Steinbart’s when I’ve thought about it far enough in advance, and I’ve also done without when I didn’t remember. From what I’ve seen here, it doesn’t seem to make much of a difference when you put it in. I’ve used the "flake"style and have put it in anywhere from the last 15 minutes to the last 40 minutes of boil, and have had what seems to be the same good results. Twano

I just looked in Al Korzonas’ book. based on his experimentation, he came up with 1/4 tsp (rehydrated for 24 hrs) for 5 gallons in the last 15 min of boil for extract beers. He gives a brief statement of 1 tsp for all grain, but IIRC and some times I don’t, in HBD he refined this to 1/2 tsp. Medford, NY swap net.optonline to reply via e-mail

I have always used it during the last 5 minutes of boil. I believe there were directions right on the package I used, so I never paid it any more attention than that. Tom Veldhouse
