Anybody got a recipe for Grand Cru

Papazian’s Who’s in the Garden Grand Cru has been one of my favorite batches. It’s spicy and light and has a pretty good bite to it. It’s one of the few batches that I’ve made that non-real-beer drinkers like which is nice because otherwise they turn up their noses at my little hobby, but is bad because this batch has gone a lot faster than the others 8-(. My Cherry Fever Stout is now starting to really become a thing of beauty after aging for a year now. Unfortunately I drank a lot of it in its early months when it was still delicious but not like it is now that it has matured. Fortunately it is a bit darker and thicker than what most of the people who want to taste my beer can handle, so I get to drink most of that batch myself 8-).

I would like to try to brew a Grand Cru beer. I have never tasted it but a friend said that I might like it. I am new to homebrewing so if anyone can help me it would be appreciated. Thanx

It is, but a few (primarily Belgian) breweries use the term to denote a beer they’re aggressively proud of. As it can have any characteristics at all, there really is no such style as "Grand Cru." – Martin — = Martin Lodahl Systems Analyst, Capacity Planning, Pacific*Bell = = If it’s good for ancient Druids runnin’ nekkid through the wuids, = = Drinkin’ strange fermented fluids, it’s good enough for me! There is a recipe for a Grand Cru in Charlie Papazian’s book "The New Complete Joy of Home Brewing". If you don’t have access to this let me know and I’ll see if I can get you the recipe. Joe

I’d be curious to hear of people trying such a brew… I’ve had great success with a belgian white, and, as I understand, a grand cru is an all barley version with similar spicing. This may vary with style. I’m talking a Celis, belgian style… AND, how ’bout white beers, what is your recipe?? I’ve done a great ten gallon brew using (my first attempt at this style was)…… 20 # 2 row 6 # malted wheat 1 # cara pils plus 1 ounce coriander (start of boil) 1.5-2.5 ounces Saaz (start of boil) plus 1 ounce coriander (end) 0.5 ounce saaz (end) 1 ounce orange (preferably bitter, but store dried peel will do) It works! Use Wyeast belgian wit yeast of course… I’ve since improved efficiency, lowered grain poundage, and upped gravity, and am modifying the above recipe, but I’d be curious to see what others have done. This is a belgian white, not a grand cru. To make a grand cru, I’d just sub barley for the wheat. twenty six pounds should get you a whopping gravity, but when I did it the first time, with the wheat, I got a reasonable gravity for Wit ( 1050.. very low yield).. Now I get 1052 and use less grain. Alright kiddies, don’t try this at home, but if you do, let me know… I got some curacao orange from pike place for ten bucks apound.. pretty good price, and they have it! okeeeeee see ya! nimbus
