Drew, This is about the best Canadian homebrew store I have seen (online at least). I think you will find the Johnson Thermostat there http://www.paddockwood.com/catalog_equipment.html#THERMOSTAT I believe they are in Saskatoon, but will ship for quite reasonable prices anywhere in Canada.
